Abstract: This article focuses on the evolution of Kashrut dietary practices in Spain in the 20th and 21st centuries, a phenomenon that comes hand in hand with the re-initiation of Jewish life in the country. While offering a wider context to understand the logic of Kashrut laws in Judaism from both a religious and sociological perspective, the article examines the lived practices of Kashrut in Spain and its colonies in North Africa as a reflection of the complex realities of Jewish life in the country’s contemporary history. By addressing the observance of Kashrut or its absence, we highlight how these practices have evolved and varied over time, place, and community. Finally, the article examines the present and future potential of Kosher food production in Spain as an increasingly growing niche market for Spanish food exports targeting the American, European, and Israeli markets.
